DJ Maddy cooks with Ayam Brand - Chicken and Sweet Potatoes Curry

DJ Maddy tries out a green curry recipe using lean chicken meat and sweet potatoes, a healthier choice as sweet potatoes contain more fibre and rich in nutrients

 

Chicken and Sweet Potatoes Curry (Serves 5)

 

800g chicken breast meat without skin

1 kg sweet potatoes, peeled, roughly chopped

400g yellow noodles or 5 bowls of rice

1/3 cup of AyamTM Processed Peas

270ml AyamTM Trim Coconut Milk

60ml Green Curry Paste

1l water

½ steam lemongrass, halved lengthways

1/3 cup coriander, finely chopped

Light soya sauce to taste as needed

1 green onion, finely chopped

1 large red onion, chopped

 

Method:

1.Combine coconut milk, soya sauce, curry paste, water, lemongrass and onion in a large saucepan, bring to boil.
2.Add chicken, cover, reduce heat to low, cook 10min. Add sweet potatoes, cover, cook 10 for another 10mins till both meat and sweet potatoes are tender. Remove the chicken and sweet potatoes from the pan, leaving the sauce inside.
3.Boil the remaining sauce till it reduce by one third. Return chicken and sweet potatoes to the sauce with peas and coriander. Discard the lemongrass.
4.Serve warm with noodles or rice.
