Learn how to make otah-otah with Maddy & Arnold

 

 

Otah Otah


500g            Fish fillet, minced OR prawn
                     meat, minced
5                   Kaffir leaves finely chopped
2                   Big eggs
100ml          Thick coconut milk
10 pcs         Banana leaves, cut into
                     rectangles

Spice Mixture
1 tbsp            Chilli powder
30g                Lemongrass, minced
10g                Blue ginger, minced
20g                Garlic, minced
50g                Onion, minced
15g                Fresh tumeric (or 1 tsp dried
                      turmeric)
                      Pepper, salt, sugar to taste

Method

  1. Mix the Spice Mixture together, stir in kaffir leaves, coconut milk, eggs and minced fish/prawn until well blended.
  2. Scoop a tablespoon of paste on the banana leaf and fold both ends, using 2 toothpicks to secure the folds.
  3. On a grill or non-stick pan, heat with a little oil, add otah to hot pan and constantly turn otah till it is firm to the touch.

 
 

乌达乌达

材料

500              鱼柳,或剁碎虾肉

5                  青柠檬叶,切碎

2                  大型鸡蛋

100毫升          浓椰浆

10                香蕉叶,切成长方形

香料混合料

1汤匙              辣椒粉

30                香茅,切碎

10                南姜,切碎

20                大蒜,切碎

50                洋葱,切碎

15                新鲜黄姜(或1茶匙干黄姜)

胡椒、盐、糖调味

做法

  1. 将香料混合料拌匀,然后拌入青柠檬叶、椰浆、鸡蛋和鱼/虾碎。
  2. 舀一汤匙肉碎于香蕉叶上,将叶子两端折好,再以牙签定型。
  3. 取一不粘平底锅,烧热少许油,将乌达均匀煎至硬。
